💗 Why This Recipe is Great

Ingredients needed for broccoli chicken casserole with text overlay.
  • Crescent Rolls: This is the crust on the bottom of the dish that soaks up all that goodness. Use regular crescent rolls or crescent roll dough. Pinch the seams together.
  • Onion: I used a red onion because I had it on hand, but I prefer a yellow or Vidalia onion for this recipe.
  • Broccoli: I used a bag of frozen broccoli. It cooked just right in this dish. Thaw slightly and drain any water from the bag before adding it.
  • Mushrooms: My family likes mushrooms, but these are optional.
  • Soup: I use cream of mushroom and cream of chicken. Feel free to use what you have in your pantry.
  • Cream Cheese: Makes the sauce extra creamy.
  • Chicken Broth: Helps to thin the sauce. You can use water if desired.
  • Cooked Chicken: Diced or shredded chicken works great. A rotisserie chicken would save time, or you could use leftovers.
  • Cheese: Shredded cheddar cheese adds more flavor.
  • Ritz Crackers: Any buttery cracker would work for the topping.
  • Butter: Mix melted butter with the crackers for the topping.

📖 Recipe Variations

  • Swap the Cheese: Use Colby Jack, Monterey Jack, or a cheddar blend.
  • Use Different Veggies: Try peas, green beans, or a mix of vegetables instead of broccoli and mushrooms.
