What is Beef Stroganoff?

Beef stroganoff is a dish usually made with beef, sauteed in butter with onions and mushrooms. This mixture is combined with a creamy sauce and served over rice or noodles. It’s considered to be a comfort food dish and with good reason. Beef Stroganoff is warm, filling, and full of flavor.

I use ground beef to make it more economical and family-friendly. I can usually catch ground beef on sale, and most of the time, I have it on hand in my freezer.

This is a very basic recipe, and you are free to add any other ingredients to make it more suitable for your family. I have listed below (tips and variations) some of the ingredients I have added to this recipe in the past.

ground beef
onion
pasta noodles
salt, pepper, garlic powder
sour cream
cream of mushroom soup

How to Make Ground Beef Stroganoff

1. Bring a pot of water to a boil and cook noodles as directed on the package. Drain and set aside.
2. Brown ground beef and onion in a large saucepan. Drain fat. Return to heat.
3. To the skillet, add seasonings, sour cream, and soup. Stir well.
4. Simmer on low for 5 minutes. Add noodles and stir well.

Beef Stroganoff Tips and Variations

Beef: I use whatever ground beef I have on hand. You can substitute ground pork or turkey if so desired.
Mushrooms: Add fresh or canned mushrooms if so desired. I have done this before, and it’s great. Baby Bella mushrooms or white mushrooms work well with this dish.
Noodles: Egg noodles are popular for this dish, but I usually use noodles I have on hand. Sometimes these might be egg noodles, penne pasta noodles, or shells. You decide what you like the best. They will all work, and the dish will be great.
Rice: Serve this dish over rice instead of noodles.
Mashed Potatoes: Yes, this is awesome, and I have done this several times. Just omit the noodles and serve the creamy beef sauce over potatoes.
Peas: Peas are great for getting in those veggies. Drain a can of peas or add a handful of frozen peas to this dish.

Storing Leftover Beef Stroganoff

Refrigerate–Store any leftovers in an air-tight container in the refrigerator. Reheat in the microwave. Great warmed up for an easy lunch.

Freeze— You can certainly freeze the gravy portion of this dish. Do not freeze the noodles in the gravy. If desired, make the gravy and freeze it, then cook noodles before serving.

Ingredients
  

  • 2 pounds Ground Beef
  • 1 onion diced
  • 12 ounce package pasta noodles
  • 1/2 teaspoon each salt, pepper, garlic powder
  • 3/4 cup sour cream
  • 1 10.5 ounce can cream of mushroom soup

Instructions
 

  • Cook noodles according to package directions. Drain. Set aside.
  • Brown ground beef and onion in a large saucepan. Drain fat. Return to heat.
  • To the skillet, add seasonings, sour cream, and soup. Stir well. Simmer on low for 5 minutes. Add noodles and stir well.
