Summer is full of all kinds of fun activities, sporting events, swimming, camping, and cookouts.  Corn is served a lot during the summer months, and cooking corn is one of my favorite things to cook. Fresh corn is the best, but frozen corn can be just as good.

My crock pot gets a lot of use during the summer months. Set it and forget it, and let the time and heat work their magic. Why should you heat up your kitchen when it’s so hot outside? Yes, there are several ways to cook corn–you could throw it on the grill or boil it in a pot of water- and they would be great–but this way is really effortless.  Seriously, using your crock pot is easy and handy. Just plug in your crock pot, add your corn, and in 4-6 hours, you will have a delicious side dish of tasty and tender corn.

Sweet corn and/or field corn are both great in the crock pot. If you like creamed corn, be sure to try this recipe. It’s also made in the crock pot and super easy. We have planted both sweet and field corn in our garden, but we mostly plant field corn. This corn can be harvested for us to eat during the summer months, and some to can/preserve for wintertime enjoyment. With these ingredients, you’ll create a mouthwatering batch of crock pot corn on the cob that’s tender, flavorful, and perfectly seasoned. Corn on the Cob—This is the star ingredient for this recipe. Whether you use fresh or frozen corn, the results will be mouthwatering.

Butter – Butter adds richness to the corn. I use half a stick of butter but feel free to use as much as you desire.

Salt and Pepper – Salt and Black Pepper enhance the flavor of the corn and season it as it cooks. 

Water ( enough to cover the corn) – Cover the corn with water. The amount varies depending on the size of your crock pot and the amount of corn you are cooking.

When I cook corn, I fill the crock pot with it. Why only cook a few pieces? Leftover corn is good for lunch the next day! Corn on the cob is a must-have for a summer cookout, lunch, or dinner. Go ahead and cook some up today!

Corn Toppings

Feel free to mix and match these toppings to create your own corn masterpiece. Whether you prefer sweet, savory, spicy, or tangy, there’s a topping variation for everyone. This is a delicious recipe and can be adapted to suit any taste preference. 

Classic Butter and Salt – You just can’t beat a classic. Add softened butter, salt, and pepper. The best way to serve delicious corn.

Mexican Street Corn – I do love Mexican street corn. Spread a mixture of mayonnaise, sour cream, and lime juice over each ear of corn. Sprinkle some crumbled cheese, paprika, cayenne pepper, and cilantro over the top.

Parmesan and Fresh Herbs – Another way to enjoy this easy crock pot corn is with simplicity. Cover with butter and sprinkle some parmesan and herbs of choice over the top.

Barbecue Bacon Ranch—If you really want to elevate this corn, brush each ear with your favorite BBQ sauce, drizzle with ranch dressing, and sprinkle with crumbled bacon. Amazing!

Recipe Tips

These are just a few simple tips and a few of my favorite ways to make this recipe. A perfect side dish for any time of year.

  • Using frozen corn is easy. It’s already cleaned and ready for the crock pot, but fresh corn is so much better. If you grow corn, this is a fantastic and fast way to prepare corn on the cob, but you may also find fresh corn at your local farmers’ market while it is in season.
  • Depending on the size of your slow cooker, you may need to trim the corn ears to fit in the pot.
  • After the corn has cooked, set the crock pot to the warm setting while the rest of the dinner is being prepared.
  • This is an amazing way to serve a side dish for Thanksgiving dinner, Memorial Day, the Fourth of July, or any summertime barbecue bash. 

How To Store Leftover Corn

Allow the corn to cool before storing it in an airtight container or zip-top bag in the refrigerator. It will keep for 3-4 days. Ingredients
  

  • 10-12 ears of corn on the cob
  • 1 Tablespoon Salt
  • 1/2 Stick butter
  • Water to cover corn
  • salt and pepper

Instructions
 

  • If using frozen corn, place corn in crock pot. If using fresh corn; husk corn, remove silks, cut in half, put in crock pot.
  • Add butter and salt.
  • Cover with water.
  • Set crock pot to high for 4 hours or low for 6 hours.
  • When finished cooking, remove corn. Add more butter to each piece and season with salt and pepper.
